For dinner tonight I made Carnitas in the crock pot again. I used a pretty hefty package of chuck roast to cook. I am so thankful for even having a large package of meat to make in the freezer, I was trying to save one for the beginning of the month and I am glad that I managed to save it.
I put it into the crock pot at 10 am this morning, its about 3 pm now and it’s almost ready to pull apart, I think we are having a early good dinner tonight. I went out and had to buy some bulk chili seasonings to season the meat and some corn tortillas and limes.
It was not that much for those items; 3 limes for 50 cents, a large package of corn tortillas for 3.50 and the seasonings for 50 cents. I have plenty of seasonings leftover after seasoning the meat and I know we are not eating the whole package of tortillas tonight. We always seem to love snacking on them with butter anyways.
When the chuck roast was halfway cooking I added more seasonings. When it was fall apart ready at 4 pm I drained the grease and pulled the meat apart. It was still a little under seasoned so I added more chili seasonings, and a punch of salt, and that made it better. I set the crock pot on low until I was ready with the tortillas.
I heated up the tortillas one at a time in my large cast iron skillet and kept them warm in my #KitchenHack cake-pan warmer. I also cut a few limes for garnish. Dinner was really good and I had quite a few tacos. We have plenty for leftovers for lunch and maybe dinner tonight and its really easy to heat up the leftover because I left them in the crock pot container, I just covered it in the fridge.
Speaking of the crock pot lid, I just had a kitchen disaster then a miracle happen to me the other day. Disaster being that I broke my 1970 vintage crock pot lid, in the sink doing dishes. Miracle is that we went to the thrift store a week later and found the exact same one, in the kitchen section of the store for only a dollar! I was so happy, and that is the only reason that I was able to cook the Carnitas because I had my crock pot working!

Today I made Carnitas in the crock pot. I had a great 1.5 pound chuck roast from our local butcher and it was a really good cut of meat. I defrosted it all night, and put it into my retro 70’s small crock pot first thing in the morning. I made our coffee, some breakfast. The crock pot was on high for about 3-4 hours then I drained all the water out that was in there from the meat. I then seasoned it and let it cook more.
At about 1pm I shredded the meat and finished off the seasonings of it. I use two different kinds of chili seasonings. I added some of my mild one and ended up finishing my whole bottle of it, using about 4 ounces of the spice into the meat, I didn’t realized how good the cut was until I shredded it. Literally their was a 1 inch paper thin piece of fat in the whole crock pot, the rest was awesome chuck roast. Normally when I get a chuck roast, there is a huge chunk of fat leftover after shredding it, and no one wants to eat that.
Yesterday and today we treated ourselves to our neighborhood, actually our neighbors, Mexican cafe, purchasing our favorite authentic handmade chorizo breakfast burritos that my husband has ever had. For a 42 year old Mexican that is something to say. And his mom taught him how to make chorizo and this is still the best place he’s tried it from. When you get a something from the cafe, you can use their salsa bar, so both days I filled up on my favorite; salsa verda. I saved most of it and used it for the carnitas tonight.
I also got some corn tortillas and some lime and an avocado from our local Mexican store. I thought that it was worth it to spend a little cash to have the meal be complete, the tortillas were only 3.50 and limes were like .50 cents and the avocado only 1 dollar. I didn’t have much money and I have to save the rest of my limited funds for some laundry in the morning.

Today is one of my favorite days of the month. I made Carnitas tacos today homemade for dinner. I think that my favorite meals are in the Mexican spice profile.
I bought two chuck roasts to make this month and I have been looking forward to making this all month. I used the larger of the two chuck roasts, about 2 lb package. I took it out of the freezer before we went to bed last night, so it would be defrosted to cook by this morning. I woke up this morning, excited to start the crock pot. I had the chuck roast in the crock pot before I had coffee served today.
Here’s how to make the best Carnitas in the crock pot.
Carnitas tacos (aka pulled beef)
2-5 lb Chuck Roast
Place chuck roast into crock pot, on high covered in chili seasonings. Cook for about 4-5 hrs covered until the chuck roast pulls apart. Pull apart completely and cook on low shredded with more seasonings. When you are able to pull apart, its done.
We use corn tortillas, heated them up and put a spoonful of Carnitas into each one. I also made a radish-cabbage slaw steamed on the side, it tasted great on top of the Carnitas. We had some limes to garnish and it was incredible. I am sure that I will have a helping of thirds, I already had some seconds.
We took a walk while the Carnitas were cooking today and I when we got home it was already done. Its so nice to come home to a house that smells like chili seasonings and good meat cooking.
I also got a drop off of homemade butter and some half and half delivered to me, from my old landlord. She gets a whole lot of dairy and makes butter every once in a while. I am excited to bake tomorrow with it, as I now have a whole lot of butter to cream into yummy things like cookies and cakes.. cant wait!
