The other day I made calzones on the portable grill again. I was pretty happy to be saved by the food bank, by getting some pizza dough to make for dinner. I had not much else to make. I was pretty happy to have pretty fresh dough, also, seeing as last weeks dough was a not so fresh and it was like plastic, it did not stretch out as good as it did last night.
I was able to make makeshift pizza dough stretchers- aka peels with some small plates of mine and a large plate. I first stretched out the dough and then I added some Italian seasonings and some homemade heirloom tomato sauce and some cooked sausage. I finished them off with some cheese and then I folded them over themselves, added some more seasonings then I grilled them. I thought I had made them better this time, but after all the pictures I still had to throw them back onto the grill for more heat.
Here are some pictures of the process of stretching out the dough, then filling and folding them.
I thought I did a pretty good job of making the moon shape that calzones are supposed to be, I just wish that I had an oven to cook them better. But it still turned out edible and we all ate it. I also used the last stretched out dough to make a foccacia bread on the grill with lots of oils and some seasonings and cheese. I cut this one up and gave everyone a triangle or two on their plates with a cut up calzone.
I also sliced some pears and added them to another stretched out dough, and then I folded it unto itself with some sugar, I made a serious foodie mistake and mess with that one, I tried to grill and eat that one, but that one had to be thrown away, I do have pictures though.
Here are some pictures of the final plates.
Until next time in the boho kitchen, thanks for reading!
